I love being with my family over the holidays but nothing starts the year off right then a trip or an engagement! Yep, Christmas break 2010 Jon & I got engaged and I will hold Belize near & dear to me forever cause of this! Besides the awesomeness of getting engaged to Jon, the trip was exceptional!
After a flight, car & boat ride we arrived…white beaches, crystal blue water & sunny skies- the perfect place to unwind. Within minutes of arriving I was in our hammock with a drink in tow & the boyfriend was putting on some of our favorite beach tunes – IZ , Somewhere over the Rainbow. Jon came out shaking, crying & trying to get down on one knee – it became a bit fuzzy for both of us…but I said YES!
Besides the enjoyment of being engaged at Matachica – we basked in the sun, kayaked, snorkled, explored the Mayan ruins & even played some scrabble! One of our fave activities while being on vacation was our day fishing trip. My mom hooked us up with a tour guide whom she heard was awesome through a friend – Tony’s Tour. (If you want to reach him email me for details) He picked us up on his boat, took us out all day – fished & even got lobster from his cages! Tony then docked his boat at a San Pedro pier – sliced & diced the fish we caught on the dock for fresh ceviche & grilled the lobster. It was surreal.
Wind came New Years Eve & took the resort by surprise. They had a packed house for reservations that night with a long list of fun party activities, however with the unexpected gusts of wind the power was flickering & boats could’t bring outside guests to the hotel. The resort was bummed but Jon & I were ear to ear with a grin – we really got to know other guests & the staff over the past few days so it was more a party for us! We had a fabulous dinner, played drinking games with the new found friends/staff & even hit around a piñata! The night was stellar, the perfect way to ring in 2011!
Overall Ambergris Caye, Belize was an extraordinary getaway with a shocking engagement & a trip packed full of excitement!
