Valentine’s Day 2013 Menu

1HAPPY VALENTINE’S DAY!!  I am not a big vday kinda gal – but I really wanted to surprise my hub this year with a kickass dinner –  so I whipped up a special menu!  Not going to lie…I spent a few hours in the kitchen…but it was worth it!  When he walked into the house he was over the moon with joy 🙂 Hope you enjoy the recipes & pics!

Shrimp & Chive Heart Shaped Ravioli with Grape Tomato Sauce

For Heart Ravioli:

  • With heart shaped cookie cutter cut wonton wrappers – set aside
  • In food processor blend – 10 cooked shrimp, handful of fresh chopped basil/chive/parsley, egg white, 1T  EVOO & S/P to taste
  • Lay one wonton down on floured surface – brush top with egg white
  • Place a dollop of shrimp mixture on top – lay second wonton down – use a fork to dimple the sides & enclose filling
  • When ready boil for 2-3minutes in salted/oiled water

For Sauce:

  • Turn broiler on high – take a baking sheet & cover with parchment paper
  • Toss grape tomatoes with EVOO & place in oven – cook till they burst
  • While tomatoes are in oven dice 2 shallots, place in skillet with 1T EVOO & let simmer
  • Add a handful of fresh chopped basil/chive/parsley & 1/2C  of low sodium chicken broth
  • Add broiled tomatoes & let stew

Lay ravioli & serve with tomato sauce!

Wedge Salad with Raspberry Basil Dressing

  • In food processor add 1/4C fresh raspberries, 1/2C raspberry vinegar, 1/4C honey, 1/2C fresh basil leaves & EVOO to your liking – blend & set aside
  • Grab a whole wheat baguette – cut off top & bottom crust – use a small heart shape cookie cutter & press heart shapes out –
  • Preheat oven to 400degrees & spray cooking oil on pan, place hearts down & spray with cooking oil again – bake till golden

Slice wedge & serve with artichoke hearts, pomegranate seeds, love croutons & dress with raspberry vinaigrette!

     Steamed Lobster & Lemon Garlic Rainbow Chard

  • Boil a large pot of water ( I used the same water from ravioli & filled with more water)
  • Stick 2 live (YIKES!) lobsters in large pot – let cook for 10minutes or so – till they turn red
  • While lobsters are cooking add the following to a skillet on the stove: 2 bunches of ripped up rainbow chard, 4t minced garlic, 1T fresh lemon juice & 2T water – cover & let steam

Remove lobsters when they turn red & plate – squeeze lemon on chard and put in bowl – melt vegan butter for dipping sauce and you are ready to serve!

Strawberry Shortcake with Glazed Strawberries

  • Preheat oven to 400degrees & line baking sheet with parchment paper
  • Rinse 1pint of strawberries, cut off tops/cut in fours – add to bowl & toss with 2T of sugar – mix/cover & refrigerate
  • In bowl add – 1/4C sugar, 1.5C all purpose flour, 2.5t baking powder, 1/4t salt, 6T melted coconut butter & 1/2C rice milk (I changed the recipe up and used coconut butter & rice milk because the first review to this recipe said she did this & it was tasty- worth a shot!)
  • Blend well…you will notice dough forming – once formed roll out 10 biscuits & place on prepared baking sheet
  • Bake for 18-22minutes or until golden

Let biscuits cool – to plate top with sugared strawberries, a dollop of fage 0%, sprig of mint & a side of soy icecream! SO DELICIOUS!

  1. Thanks for the shout out on my raspberry vinaigrette. Just wanted to point out a small typo, my recipe calls for 1/2 cup of EVOO, not one cup – of course, that’s totally wonderful that you opted to use less. Thanks again for sharing a link to my recipe. Blessings to you, Kelly
