Matcha Green Tea Chia Pudding

IMG_6853

For the sweltering summer months we need a cold treat, and this is it! It combines two powerhouse foods – chia & green tea!

I love chia seeds & find them really tasty in recipes because they bulk up quickly to form a gelatinous texture (previous recipe here , here & here)! Plus, these seeds are loaded with omega-3 fatty acids, fiber & antioxidants to just name a few of the benefits.

Matcha green tea powder has endless health benefits as well (read here), plus adding it to any recipe will give you a bit of pep in your step with the caffeine!

So lets get to making this summer treat…

  1. Add the following into a blender: 2C almond milk, 2T maple syrup, 2t matcha powder & 1t vanilla extract – blend until mixed well
  2. Grab a medium sized bowl & add 6T chia seeds
  3. Pour liquid mixture over chia seeds  – stir thoroughly

Let the chia pudding sit out & stir every few minutes for 15minutes. Then let the mixture chill in the fridge for at least an hour or overnight (I did overnight & it was amazing).

Top with fresh berries & a sprinkle of unsweetened coconut.

NYC no-go soda ban?

_MG_1258

Lots of debate in The Big Apple – a bill was proposed by Mayor Bloomberg that caused quite a stir a few months back & this week it was struck down in a Manhattan court.

Quick overview: Bloomberg wanted all sugary beverages larger than 16oz to be banned in the city – my view LOVE. Everyone else, not so much. With that being said, the bill was supposed to go into effect this past Tuesday – it did not. Now Bloomberg will appeal & we will see where the sugar flows.

Honestly, it’s crazy scary how much sugar is in some of our drinks – if you do need a ginormas drink please get diet or 2 small sizes (cause really who would pay for that).

Anywho. I propose water – gulp it up all day long. It is not only refreshing but it keeps your body flowing. Literally. and if you can not handle the clean taste of pure h20 then guzzle on a chia fresca (my brother shaking his head in horror). Check it out.

  • 16oz fresh water, juice of 2 limes, 1t sugar (truvia for me) & 1T chia seeds – Stir it up & garnish with fersh mint or a lime wedge!
Nutritional Info Per Serving (1 drink): 80 calories – 3 grams of fat – 15 carbs – 3.5 grams or protein

Yes, that simple. Taste it, enjoy it & get into it. Chia is a power food – packed with protein, potassium & antioxidants…really the list goes on.
