Cumin Scallops with a Cucumber Almond Salad

Okay, so this salad is so YUM! Such a crisp summer salad that I will be whipping up for dinner parties for sure! The scallops can either be pan fried, baked or grilled. The plan was to initially grill these babies, but the warm NYC day turned cold quickly so I decided to pan fry…still delicious, but grilled scallops are out of this world, so going to try that next time!

  1. Peel the cucumber, then slice lengthwise & quarter – place in bowl
  2. Then add 1/4C crushed raw almonds, 1 scallion thinly sliced (white & green parts), 1t lemon juice, 1T EVOO, 1/4C chopped flat leaf parsley & 1/8t salt – blend & set in fridge until serving
  3. Rinse scallops, pat dry & rub with cumin mixture (1/4C cumin, 1t salt & 1/4t pepper)
  4. Heat skillet with EVOO & sear scallops for 5 minutes on each side (or until cooked to your desire)

Skewer scallops & serve on cucumber mixture! Hope you like!

Meatless Monday: Chickpea Patties with a Spiced Yogurt Dressing

The hub & I were walking home the other day & we just so happened to pass by a free sample stand (okay so we crossed the street to get the free sample, we like our free food). Anywho, they were giving out free falafel’s with this amazing sauce to dip them in! Needless to say they did not get our business, I picked up a few things from the grocery store & was on my way to making a similar treat for us at home!

  1. Preheat oven to 350 & toast 2 pitas til they reach the crispiness you desire & set aside
  2. In a blender mix: 1 15oz can unsalted chickpeas, 1/2C flat leaf parsley, 1.5T EVOO, 1 clove garlic, 1t cumin & S/P to taste
  3. Form the mixture into 4 patties (or 8 smaller patties) & coat with whole wheat flour, tapping off any excess
  4. Preheat a skillet with EVOO or cooking spray & place patties on either side til golden brown – set aside
  5. While cooking whisk together: 1/2C Fage 0%, juice from 1 large lemon, 1t cumin & 1/4t salt and pepper

I went ahead & made a side salad with lettuce, tomato, red onion & topped with the spiced dressing. The hub on the other hand made mini sandwiches out of it all – pita filled with the lettuce, tomato, onion, the patty & a dollop of the dressing. That is the beauty of Mediterranean cuisine, its tastes so yum all together so just grab your plate & pile away! Enjoy!
