Meatless Monday: Quick Raw Broccoli Salad

_MG_2596This dish is not only raw & simple to make (5minutes!), but it brings unexpected flavor in every bite! It is such a fun twist to any side salad for your summer BBQs & will for sure impress your friends & family!

Lets get to it…

  1. Roughly chop up 2 small heads of broccoli & dice 1pint of baby tomatoes – place in bowl
  2. Finely chop up each fresh herb & add to bowl: 1T mint, 1/2T rosemary & 2T chives
  3. In the same bowl add 2t fresh lemon juice,  2T nayonaise, 2T EVOO, 2T balsamic vinegar & 2 pinches of both garlic powder & ground pepper – mix well

That’s it!

This salad can be served right away or stored in the fridge for up to a day. Now get to it! I don’t want you to regret not having this salad at your next summer party!

NYC no-go soda ban?


Lots of debate in The Big Apple – a bill was proposed by Mayor Bloomberg that caused quite a stir a few months back & this week it was struck down in a Manhattan court.

Quick overview: Bloomberg wanted all sugary beverages larger than 16oz to be banned in the city – my view LOVE. Everyone else, not so much. With that being said, the bill was supposed to go into effect this past Tuesday – it did not. Now Bloomberg will appeal & we will see where the sugar flows.

Honestly, it’s crazy scary how much sugar is in some of our drinks – if you do need a ginormas drink please get diet or 2 small sizes (cause really who would pay for that).

Anywho. I propose water – gulp it up all day long. It is not only refreshing but it keeps your body flowing. Literally. and if you can not handle the clean taste of pure h20 then guzzle on a chia fresca (my brother shaking his head in horror). Check it out.

  • 16oz fresh water, juice of 2 limes, 1t sugar (truvia for me) & 1T chia seeds – Stir it up & garnish with fersh mint or a lime wedge!

Yes, that simple. Taste it, enjoy it & get into it. Chia is a power food – packed with protein, potassium & antioxidants…really the list goes on.
